01 / 07 The grove
It begins in the grove, early in the season.Koroneiki olives from the family’s groves on the Messara plain, picked in the first weeks of the harvest, while the fruit is still green.

02 / 07 The fruit
Off the tree, into the crate.The fruit is crated in the grove and driven to the mill on the Tympaki road, where it is weighed and goes onto the line.

03 / 07 The intake
Ten tonnes an hour, straight off the plain.The mill stands among the groves. Fruit arrives, is weighed, and goes onto the line at ten tonnes an hour.

04 / 07 The wash
Leaves off, dust off.Leaves and dust are stripped and washed away before milling. Only clean fruit goes into the mill.

05 / 07 The mill
Crushed, stirred, and spun apart.The olives are crushed to a paste and stirred below 27 °C for no more than forty minutes, then the oil is separated cold. Nothing is heated, nothing is added.

06 / 07 The fill
Kept in steel, bottled to order.The new oil rests in stainless steel tanks and is bottled when it is ordered. Every bottle carries the number of its lot.

Packed at the mill, sent to 49 countries.Cases are packed and loaded in the mill’s own yard, traceable from the grove to the bottle, and shipped to forty-nine countries.
