Harvested early in the season, at the phase of ripeness that gives the highest polyphenol content, the oil is distinctly strong in flavour and aroma and rich in antioxidants. Its polyphenols qualify it for the health claim under Regulation (EU) 432/2012, and the label carries it: olive oil polyphenols contribute to the protection of blood lipids from oxidative stress.
